Method of Preparation:

Preheat oven to 325F/160 C/Gas 3, and grease a baking tray.

Remove the stems of mushrooms; set mushroom caps aside and chop the stems finely.

Heat butter in a pan, and sauté mushroom stems, onion, garlic and pepperoni, stir and allow it to cook through.

Pour in the chicken stock, crackers crumbs, parmesan cheese, oregano and season with salt and pepper to taste. Turn off the heat and leave to cool down

Fill each mushroom cap with pepperoni mixture and lay into prepared baking tray. Cook for 25-30 minutes until golden brown and hot.
